Just a tip for the picada, I’d recommend finely chopping the hazelnuts before trying to wiz – some wiz sticks might do the base serving size, but mine was a bit too big and the hazelnuts sat at the bottom untouched by the blades.

Also, I slightly oversalted doh, so I would recommend being really cautious so you can fully appreciate all the complex flavours.

Also, if you’re into making sourdough, I found the timing of cooking the soup while getting the bread baked in a crock pot was pretty good (bread was done before the soup, and had had time to cool a bit) and it felt like a really special meal.
