I noticed at least question about coating the chicken with corn flour prior to frying. I found the best way to do this is to transfer a few pieces of chicken at a time from the marinade to a separate plastic bag to coat the chicken. There are too many pieces of chicken in the original marinade bag to coat all of the chicken at once. The other advantage of using a second bag is that you can leave the liquid that separates out from the marinade in the original marinade bag by allowing the liquid to drip off of each piece of chicken as you transfer the chicken to a separate bag. The excess liquid just makes it more difficult to coat the chicken pieces.

Hi Mary, I was thinking of doing this too. Shallow fry till a bit crispy then finish in the oven. Did you put it on a rack or put it straight on a oven tray?
