Hi Nagi, I’ve been wanting to make this recipe for awhile but haven’t found the chance! I’m wondering if it would be ok to prep the curry paste in advance, keep in the fridge, and then cook the rest of the meal a few days later? Or is it best cooked fresh? Thanks!

This is THE definitive Thai yellow curry recipe. Ever since I moved from LA to Albuquerque I’d been missing the delicious yellow curry at my favorite restaurant Sticky Rice. This recipe nailed that flavor 100%! This was probably the first recipe I’ve made that felt restaurant-level good. Whenever I have the energy I find myself revisiting this one again and again.

Wow! We had a mix of prawns and fish and it hummed! The potato took longer than the recipe , so I’d slice even thinner than what Nagi says – and give another few minutes than the carrot.
