Should I shave this back to be like yours in the video, leaving a little bit of fat, or should I just leave it? Thanks

It’s so big only the beer fits in the roasting pan, not the water. I’m guessing I should just check the liquid level doesn’t go down too much and top up with water as it’s cooking? It’s in the oven, any tips would be great!! Thank you 🙏

I have tried a few pulled pork recipes and this one is far and away the best one. I used a pork loin roast and it was so tender I didn’t need two forks to pull it apart. BBQ sauce is amazing too. Can’t wait to make it again.
