This recipe is INCREDIBLE! I used regular eggplant and zuchinni and maesri paste, the rest as per recipe. This is exceptional but it is S P I C Y!!!! I have a good spice threshold but WOW! This makes the jungle curry at Spice I Am in Sydney look like a child’s porridge. Definitely recommend but tread with caution, I’ve had to ring in sick for work tomorrow!!! Worth it!!!!

Tried this recipe tonight – so delicious! I couldn’t find Keffir leaves, so I added extra lemongrass, noted as a substitute. I also didn’t have asian shallots, so I fried up onions nice and crispy and added them – my taste buds were singing! I love spicy, so the spice was perfect for me. This will be going on regular rotation. Thank you for this recipe!

This recipe is what I was looking for! I have two cans of Maesri green curry and I could not remember how my mother uses it. The recommendations and extra notes were so helpful. My dish turned out well and just like mom’s. Thank you!
