I thought the same, but it’s great to make a sausage breakfast sandwich with it. The next time I think I’ll just add in cooked crumbled breakfast sausage and onions.

I live alone, so I halved it, baked it in a 9 x 9 pan for 30 minutes. Came out perfect!

Hi Sharron, just two of us here, too. I’d bake the recipe as is, then divide it up into portions, with some being left out to eat and the rest going into the freezer.
