Chef JB – Culinary Contributor!
While I love creating my own original recipes, I am also mindful of authenticity when it comes to recipes, including learning the proper way to make traditional and classic dishes. I also believe there’s always something new to be learnt in the kitchen and so I’m constantly striving to improve my skills and working knowledge.
To this end, since early 2021, I have been working with Jean-Baptiste Alexandre, a classically-trained French chef residing right here in my home town, Sydney, Australia. Together with his talented business partner Heather, he owns and runs Baptiste & Wilson, a wonderful catering company whose services I employ from time to time.
“JB” (as he’s known to us) has extensive knowledge and skills built from his culinary education in France and years working in Michelin-starred restaurants around the world, including with the acclaimed French chef Daniel Boulud in New York and the late Alain Chapel in Mionnay, near Lyon, France.
JB has helped develop the recipes for some of the more difficult, classic dishes that you see on this website. He’s also a goldmine for learning (professional! and secret!) tricks and techniques employed by fine dining restaurants and pro chefs.
French food, of course, is where he really comes into form! His hand has been instrumental in the creation of recipes I’ve published such as Beef Bourguignon, Brioche and Duck Confit, just to name a few.
Besides being a super-talent in the kitchen, Dozer approves of him. Probably because where JB goes, great food follows!
